Ability to cut meat to customer specifications with a high yielding level of skill. Support the production team with proper level of trimmed product ready for further processing. Qualifications include experience in meat trimming and knife skills, basic knowledge of meat cuts, and ability to work in a team environment. Skills required include adaptability to sudden changes in customer demands or operational goals, commitment to complete work, good interpersonal skills, results and detail orientation, and customer service orientation. Responsibilities include identifying deficiencies in raw materials, identifying and trimming all loins, labeling sub primal cuts after trimming, and knowledge of basic cuts and trims produced by the prep table. Some heavy lifting is required. Physical demands include heavy lifting, ability to manipulate fingers and limbs to operate equipment, ability to smell to detect wholesomeness and spoilage, and working in refrigerated, cold, wet processing and warehouse areas with exposure to moving machinery and sharp surfaces.
